    For shipping :

    Is there a way of specifying a shipping method applied to a product
    (not shipping price)

    ie. if someone buys widgetA ship method is ship1
    if someone buys widgetB ship method is ship2

    if someone buys both products  ship2 is used

    Yes, you will need to use the Availability rule in your shipping method to show/hide the available shipping methods based on the product in the cart. This would be a custom rule (XSL) and you will find some examples in the screen. If you're not familiar with XSL or need help, you may engage us to write the script for you for a small fee.
