I have a customer who wants to cancel an order. Will the stock increased again with the amount of the canceled items when I cancel this order What is the best way to do this?

- Inventory : Increment - Change order status to "Incomplete".

Yes, however, don't be concerned if it appears on the screen. In most countries, it's even required by law to keep cancelled orders (for tax audit purposes) so don't be concerned if you cannot delete them.
